When you talked of "cafe-ing" the bike, I thought you meant low bars and the typical solo seat.
I don't know what scrambler-type bars look like.  I guess you will be sitting up straight.
With low bars, most folks feet want to extend rearward.  I rode a lot of miles with my feet on the passenger pegs.
