Yes, 7.5A fuses should be OK - these are generally slow-blo/time action ones in that range too so even very short, higher pulses shouldn't cause nuisance fuse actions based on I^2t factors.
Bob's fusebox looks like a good possibility. Just remember that where the fuses are originally, they are very well protected from rain/road water. Depending on where you relocate things, you may want to consider the "Water resistance" of the enclosure. Personally, I think that if I install a fuse box on my airheads (just have the inline single SAE blade fuse holders now, which are also very splash-proof) I might actually want to have one that has a relay switched output as well, so I could use it for running additional lights, heated suit, etc.
