as i have made the r65 into a cafe racer  and got rid of most of the wiring the rev counter is off and not working , is there a way of checking the rpm without the rev counter clock. ie at the coil or plug

I was going to suggest shopping at an auto supply but now wonder if the usual easy hookup offerings would work on the 2-cylinder BMW? Good question. Hope someone will help out with a real answer.

The original rev counter works by counting pulses from the primary side of the ignition coil. I guess any other electronic tachometer could be made to work off the same connection. I f you mean just a spot one off measurement for maintenance purposes some automotive multimeters can indicate RPM again from the same coil connection.
