I am having some issues with my front brake and I notice that the front brake fluid reservoir is at an "unusual" angle (as I see it)... is this normal or something I need to adjust

You need to loosen the fasteners that hold the assembly, commonly called a ' perch ', not the fish .
After loosening them you can rotate the assembly to suit you .

The angle of the reservoir never does seem quite right but that is way too far forward. As Bob said you can rotate the whole assembly backwards.
The optimum angle of the brake lever is supposed to be an extension of your arm. First pic shows the clutch side but you get the idea. And another pic showing something like the correct angle of the brake lever even though the reservoir is still not quite level.

Brilliant. Excuse my ignorance, which screw is the one I need to loosen? I had a look and looks like I need to loosen the "mirror" to be able to rotate it?

Look closer. There's a single, forward facing, Allen-head screw on the bottom of the perch.
