The new rotor I bought requires that I grind off the rivets holding the old rotor on and inserting screws and nuts. Is that the way of things when buying after market rotors?

The old rotor, properly removed without damaging the rotor carrier, will allow the new rotor to be bolted on securely. The new look is pretty sharp and the install is common to most all replacement rotors.
To help prevent the grooviness found on the OEM rotors, consider a new rotor with the vent holes staggered in such a design as to wipe the brake pads across the full surface of the rotor's contact area.

The EBC aftermarket rotor I bought came with a carrier, and bolted right onto the wheel using the original fasteners.

Sounds like you have a semi-floating rotor there .
No, it's not the usual way to get a replacement rotor .

Not to be picking nits, but this doesn't belong in the trading post section, unless someone is selling or buying... seems more technical to me.
(consider it moved - rv)
