The best way to achieve your engine increase is with a straight-out transplant.
This is one source for a seat pan: http://www.boxercafe.com/

Your screen name may be a results forecast of an attempt to hotrod the R65 engine. Many have tried.
The organ transplant would have better odds of achieving a moderately reliable scooter. Remember that the R65 has BMW's short wheelbase chassis so engine/trans combos could be an issue.
Welcome to all things R65, Mr Grime. Several members have outstanding cafe-style bikes. They'll chime in soon and likely post up pics.

A buddy of myne was a racer for BMW in Canada. He said even after the coversion the bike is still reliable and rideble on the streets. The short wheelbase is the trick. The bike is so light and combine with transformed engine is killer :)
BTW tanks for the links Rob

Here are several sites that gave me inspiration and where I spent my money when I cafe'd mine. Not R65 specific but definitely boxer specific.
www.rockerboxer.com/garage.html
www.airtech-streamlining.com/ (Their fiberglass parts are top-notch)
www.benjiescaferacer.com/ (not boxers but what a craftsman)
