will a /7 seat fit a 1981 r65?

Not likely, at least not without modification.

The R65 has a shorter wheelbase than the /7.

I'm not sure (haven't checked the #'s) but they may use different sub frames, as well.

My R65 came with a /5 seat... seems to fit well but I dont know what (if any) modifications the previous owner has made...

The /5's were shorter wheel base bikes.  Some of the later ones had swing arm extensions welded in to "improve" the handling.  Still see a lot of short wheel base '5's running around and it's a desirable bike.  You could always take a /7 seat and cut it down into a solo saddle.  Those look really cool IMHO.
